If you’re on a farm and say you want Jersey juice, you might end up on the business side. (A Jersey is a breed of dairy cow, for those of you who don’t hang out in a barn.) But soon there will be a West Lawrence restaurant where Jersey juice means something completely different.

Juice at Jersey Mike’s Subs is a special blend of red wine vinegar and olive oil, and the growing restaurant chain considers it one of its keys to success, saying the combo gives its sandwiches a distinctive zing.

Soon, residents of Lawrence will be able to see for themselves – again.

Jersey Mike’s Subs is scheduled to open Sept. 14 near the intersection of Sixth Street and Wakarusa Drive in West Lawrence. But it won’t be the first time in town for the restaurant whose roots can be traced back to a Jersey Shore beach. The sandwich shop used to have a location along 23rd Street, but it closed four or five years ago.

The new Jersey Mike’s location will occupy the former location of Burgers by Biggs in the Bauer Farm development. Burgers by Biggs, if you recall, moved to the Bob Billings and Wakarusa Drive area.

Lawrence’s new location is part of Jersey Mike’s aggressive expansion plan in the greater Kansas City area. A North Carolina-based group has purchased franchise rights in the area and is opening restaurants in Lee’s Summit, Missouri and Shawnee, and exploring sites in St. Joseph and Warrensburg, Missouri, among other places, a group owner said. . me.

As for why the group thinks the sandwich chain will make its way to the area, they have a theory about it.

“I would say freshness is the key word there,” said Brandon Moore, general manager of the new Lawrence-based store.

Moore said Jersey Mike’s is different from a lot of sandwich shops because it slices all of its meats and cheeses the moment the order is placed. Vegetables are also sliced ​​daily on site, and bread – white, wheat and rosemary parmesan – is baked several times a day at the store. And, of course, they recommend washing it down with The Juice.

The restaurant, however, is perhaps most distinctive for its mix of hot and cold sandwiches. While some sub-chains have a toaster, Jersey Mike’s has a flat-top grill. It is used to create a selection of Cheese Steak sandwiches. You’ll even see a few of them labeled Philly Cheese Steaks, even though the restaurant is truly New Jersey and the entire chain continues to be run by a Jersey Shore native who bought the original restaurant in beachside at the age of 17, according to the company’s official story.

But the people of Philadelphia paid a lot of the bills early on. Founded in Point Pleasant, New Jersey in 1956, the store was only about an hour from Philadelphia and New York. The Jersey Shore beaches have made the shop a popular summer restaurant for vacationers from both cities.

The menu includes standards from both cities. Moore said the simple but classic original Italian — provolone, ham, prosciuttini, cappacuolo, salami and pepperoni — is the most popular menu item at most stores. But the cold sandwiches also include several versions of roast beef, turkey, and even a freshly made tuna sandwich. As for the hot sandwiches, there are the traditional Philly cheese steaks, including one with a touch of chipotle mayonnaise, but also a selection of Philly cheese chicken steaks.

Franchise owner and operator Dan Markgraf said he jumped at the chance to include Lawrence in his territory for Jersey Mike’s. He said the sandwiches have proven popular with students in other markets, and he thinks the West Lawrence location, directly across from Free State High, will be popular with that market as well, in addition. of the growing residential area in northwest Lawrence.

“We’re excited to really expand Jersey Mike’s footprint in this region,” he said.
