The recipe I’ll be sharing with our community is one of my family’s favorites, writes the new School District 43 (Coquitlam) board chair.

The recipe that I will be sharing with our community is one of my family’s favorites.

It’s so easy to make, a great way to use up leftovers and my kids love it even more than the big Christmas turkey dinner.

It’s minced turkey.

The four ingredients are the turkey, the stuffing, the mashed potatoes, and of course… the butter.

The exact amounts are not important, increase or decrease them depending on how much you are feeding.

I try to have roughly equal portions of the three main ingredients, sometimes that means making a can of stuffing or a small batch of mashed potatoes, depending on how much is left over from the night before.

Preheat your large skillet or pan with a little cooking oil.

Cut your turkey into bite-sized pieces and add them to the pan.

Add your mashed potatoes and stuffing to the pan, crumble them and mix everything together.

Mix well for the first few minutes to make sure it is well combined and heated through.

Then add your butter and fry for 5 to 10 minutes until a nice golden crust forms at the bottom.

Flip and repeat until there are enough flavorful golden crispy pieces for everyone, season with S&P to taste.

Serve with your leftover cranberry sauce or gravy.

That’s it! The children will swallow it. It doesn’t take too much work to do, and there aren’t even too many dishes to clean – perfect for Boxing Day!
